Too Many Mulberries

It is mulberry season and there is something quite rebellious about one's face and fingers becoming smeared with purple juice. Mulberries are a super healthy tasty treat - full of anti oxidants, anti cancer phyto-chemicals, Vitamins A, C, E, K, Potassium, Manganese, Magnesium and Iron. We had so many, I have turned them into every possible concoction I had time for.

We are currently on an all purple diet of Mulberry Smoothies (handful of mulberries, 1 cup almond milk, honey, banana whizzed up), Mulberry Muffins in the morning and Mulberry Fizz (handful mashed mulberries, apple juice, splash of soda water), Mulberry Jelly (using Agar Agar) in the afternoon and Mulberry Pie (4 cups of mulberries, 1 cup sugar, reduced and baked in pastry) for dessert.
